Over the weekend I decided to have a little fun and surprise my kids with something they never would have dreamed of – popsiscles for breakfast. Summer is the time for fun and I want my kids to have the best one yet!
Having popsicles for breakfast seemed like a really fun way to start off a Sunday morning, but of course, I didn’t want to just load them up with sugar and junk. So I made healthy yogurt popsicles with the same ingredients I would give them for a regular breakfast. But when you freeze them on a stick? They are so much more fun!
Do you know how excited they were when I said, “Who wants to go outside and have a popsicle for breakfast”?
Summer Breakfast Popsicles
I used only two ingredients for these: a strawberry Chobani yogurt and a Strawberry Banana Odwalla smoothie. I started by pouring a little bit of the smoothie into a popsicle mold. (For these I used the Jelly Belly Lickety Sip Ice Pop Mold (affiliate) because it has no-drip handles. Here is a great list of awesome popsicle molds.)
I placed it in the freezer for about 20 minutes until it started to harden, but wasn’t totally frozen. Then, I added a scoop of yogurt and did the same process a few more times, placing the stick in once I got everything filled up towards the top. After the last bit of juice, I left them in the freezer over night.
I love finding new ways to have fun with my kids and look forward to finding new things to do with them this summer. What is your favorite fun thing to do with your little ones during the summer months?
