Girl Scouts® Caramel Coconut Blondies

I am super excited to share this awesome treat with you. If you are a fan of Girl Scout Cookies® (who isn’t?) then you are going to love this. Pillsbury™ is now offering Girl Scout Cookie™ inspired baking mixes! Now your favorite cookies can be made into brownies, blondies and cupcakes. Yum!
Caramel Coconut is my most favorite Girl Scout Cookie™ ever.  We decided to try out the Girl Scouts® Caramel & Coconut Blondie Mix. (Spoiler alert: it was awesome.) And don’t worry Girl Scouts® Thin Mints® lovers, they have something for you too, keep scrolling… I’ve said it so many times here, but I just love baking with my kiddos. As my son gets older he seems to be veering away from the kitchen a bit (except for licking the spoon, of course) but luckily my daughter is still excited to participate. Maybe it’s a girl thing.

Girl Scouts® Caramel & Coconut Blondies

This yummy baking mix was super easy to make because I only needed three ingredients (eggs, water, butter). I was excited to see that these mixes have no colors, preservatives, or artificial flavors. Plus, I can grab them quickly at most retailers including Walmart, Kroger, and Target.

Samoa Blondies

Yesterday started off as a rainy summer day and we knew we’d spend most of it inside doing lazy day kind of things. For me, that absolutely includes baking! As usual, my girl was super excited. Haha!

I want my little girl’s memories to be filled with baking in the kitchen with mama. Standing on the stool to reach the bowl, cracking eggs, making a mess, and high-fiving after we taste the delicious food we created. Kitchens are meant to be messy. Rainy day baking is what memories are made of.

Our blondies turned out perfect! Soft and chewy and yeah, full of flavor inspired by Girl Scouts® Samoas®. I knew if the Girl Scouts® put their name on the box they would be legit.

    I tried this mix yesterday and thought it was terrible. There was a really unpleasant aftertaste – maybe a fake butter flavor. I was really disappointed.
