These lemon cheesecake bars only take four ingredients! With a sugar cookie crust it’s sweet and tangy and everyone loves it.
Unlike your normal cheesecake recipe, we are not using a graham cracker crust. Oh no. We are using sugar cookies. Yummmm.

Lemon Cheesecake Bars
I love recipes that are tasty and super easy to make. Yes, I like baking and feeding my family yummy things, but I do not like to stand in the kitchen all day. Plus, the less ingredients, the less chance I have of messing it up.
So, here’s what you will need for your lemon cheesecake bars:
- A package of sugar cookie dough
- 1/2 a cup of sugar
- 1/4 a cup of lemon juice
- 1 package of cream cheese
First, you’ll bake the cookie dough layer. Spray an 8×8 pan with butter spray and press the dough into an even layer. I didn’t use the entire package of cookie dough, about 3/4 of it.
Bake the dough for about 15 minutes on 350°. The thicker the layer of dough the more time you’ll need – just watch it and take it out when it’s turning brown around the edges.
Let the cookie layer cool all the way before you add your cheesecake layer.
To make the lemon cheesecake, just mix up your cream cheese, sugar and lemon juice. I used fresh lemon juice because I think it just tastes better. BUT, you can totally buy the pre-made stuff if you want.
If you juice it yourself, you’ll need 2 lemons.
Spread the cheesecake mixture over the sugar cookie layer and bake again on 350° for 15 minutes.

Lemon Cheesecake Bars
- 1 pkg sugar cookie dough
- 1/4 cup lemon juice
- 1/2 cup sugar
- 1 8 oz package cream cheese softened
Cookie Dough Layer
- Preheat the oven to 350
- Spray an 8x8 pan with pan spray
- Press premade cookie dough onto the pan in an even layer
- Bake for 15-20 minutes or until brown. Allow to cool.
Lemon Cheesecake Layer
- Mix together your cream cheese, sugar and lemon juice.
- Spread evenly onto your cooled cookie layer.
- Bake on 350 for 15 minutes.
- Serve and enjoy!
