My life as a mom is about to get busy: School is starting.
This is my first year navigating through life with a child in elementary school. My son is starting Kindergarten this year and I’ll be honest, I’m nervous. For all of the obvious reasons of course (will he like it? will he make friends? will he miss me?) but also because our laid back life is about to get a lot more structured.
During my last year as a work-at-home mom we have been able to wake up when we want to, eat meals at whatever time was convenient for us, and have no real place to be with the exception of my sons baseball games.
Now we are going to be on a very structured morning schedule, getting two kiddos up and ready to get out the door, making sure my son has a good breakfast before leaving. Then, we have afternoon pickups, baseball practices and games and my daughter plays soccer as well.
Like most moms, I make sure to plan ahead and do my best to ensure that my kids are eating healthy. But guess who we totally forget about when we are managing a home and running our kids around? Ourselves.
We grab a piece of leftover pizza cold from the fridge, or a handful of chips in replace of a good lunch. Heck, sometimes I forget to eat at all.
The problem though, is that how will we ever keep up if we don’t make sure we eat well? It’s important to stock your cabinets with tasty, satisfying, quick foods that offer moms something quick to fill their belly. Because let’s be honest, most days we aren’t going to stand in the kitchen for half an hour preparing a meal for ourselves.
Here are a few guilt-free quick meals for moms:
Lean Pockets. These are my favorite. You will almost always find the White Meat Chicken Jalapeno & Cheese with a pretzel bread crust in my freezer. I love them SO much.
They are delicious! They give you 12 grams of protein, no artificial flavors and they’re only 260 calories. Plus, there is no prep work, just pop them in the microwave! I could not think of a better afternoon quick meal.

Energy Bites. You can make these in bulk over the weekend using this great recipe for something quick to grab when you’re feeling hungry.
Avocado Grilled Cheese. Make a quick grilled cheese sandwich but add avocado inside!
Turkey Roll Ups. Grab a piece of turkey, slice of cheese and whatever you can find to go with it in your fridge: lettuce, bacon, etc. Roll it up and eat!
Omelette in a Mug. Mix a couple of eggs in a coffee mug and add in cheese, salsa, salt and pepper.
