Banana Pudding Cookies

My family is crazy about banana desserts. Every holiday or special occasion they ask me to make Banana Pudding or my famous Chocolate Chip Banana Bread. These cookies are quickly rising to the top of favorite banana recipes.

The key to these cookies being so moist and soft is the pudding baked inside. Once you make cookies like this it will be hard to go back to making them without pudding!

Ingredients You Will Need

  • Banana – of course, the cookies must have a real, ripe banana
  • Banana Pudding Mix – great banana flavoring and what makes these so soft
  • Brown Sugar
  • White Chocolate Chips
  • Baking Soda
  • Eggs
  • Vanilla Extract
  • Butter
  • Flour

How To Make Banana Pudding Cookies

Step One: Cream together the butter and brown sugar.

Step Two: Add in the smashed banana, eggs and vanilla.

Step Three: Separately stir the flour, baking soda and pudding mixture.

Step Four: Slowly add the dry ingredients to the wet ingredients bowl.

Step Five: Fold in the chocolate chips.

Step Six: Form small balls of cookie dough and place them on a baking sheet about an inch apart.

Step Seven: Bake until the edges turn golden brown, about 10-12 minutes. Then let them cool on a wire wrack.

Quick Tip

The best way to make sure cookies come right off the pan with no stick is to use parchment paper. This goes for all cookies and I strongly suggest using it!

Storage

Keep these cookies in an airtight container at room temperature for about 5 days.

Ingredients Method

Ingredients
  

  • 1 package of banana pudding jello mix
  • 1 ripe banana mashed
  • 1 cup brown sugar
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup white chocolate chips
  • 2 cups flour
  • ½ cup butter softened

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add in the mashed banana, eggs, and vanilla extract. Mix well.
  4. In a separate bowl, combine the flour, banana pudding jello mix, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Fold in the white chocolate chips.
  7. Put some vegetable oil on your hands and form small balls, place them on a baking sheet about an inch apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
