2-Ingredient Pumpkin Muffins
Yes, these yummy pumpkin muffins are made with just two ingredients. No, not two ingredients plus some water or maybe an egg. Two ingredients in the bowl, period.
Pumpkin Spice Muffins Ingredients
Here are the only two things you’ll need:
- 100% Pumpkin (This is not pumpkin pie filling <– that has extra spices in it that we don’t need.)
- Spice Cake Mix (The Super Moist cake from Betty Crocker really is super moist and makes the best muffins.)
All you need to do, is mix the two ingredients together in a bowl. It’s so easy it almost doesn’t seem like it could possibly work. But oh, does it ever.
Spray a 12 count muffin pan, put about a 1/4 cup scoop of batter into each and bake for 20 minutes on 350 degrees.
This Can Also Make Pumpkin Bread
Want to make pumpkin bread instead? Follow the exact same steps but instead of a muffin tin, pour the batter into a loaf pan and bake for 40 minutes on the same temperature.
Here are a few things you can add into the batter for something extra:
- Chocolate chips
- White chocolate chips
- 1 can 100% Pumpkin
- 1 box Spice Cake Mix
- Preheat oven to 350.
- Mix the two ingredients together in a bowl.
- Scoop 1/4 cup into each spot of a muffin tin.
- Bake for 20 minutes.
- Let cool then remove from pan.
