Mini Buffalo Stuffed Peppers
This is a quick and delicious appetizer to make for your next party. Mini Buffalo Stuffed Peppers need just a handful of ingredients and very little time to put together. These are miniature in size so they’re a great handheld snack.
Mini Buffalo Stuffed Peppers
These are super duper quick to get ready. Just a little cutting, mixing, stuffing and you’re done. You don’t have to heat an oven to use the stove. I love making these in the summer as a little snack while you’re waiting on dinner.
Another favorite of mine is a Slow Cooker Buffalo Chicken Dip.
Ingredients
- Mini Sweet Bell Peppers – you’ll usually find these in the red and orange color variety.
- Cream Cheese – make sure to let this set out to warm to room temperature or else it’s a nightmare to try and stir.
- Shredded Cheese – we used cheddar cheese but a colby jack would work great and if you want an even bigger kick, try pepper jack.
- Sour Cream
- Buffalo Sauce – whichever is your favorite brand.
- Ranch dressing packet
- Chives – this is for garnish and totally optional.
How To Make Mini Stuffed Peppers
1. MIX – Stir up the cheeses, seasoning, buffalo sauce and sour cream in a bowl.
2. CUT – Slice the bell peppers in half and remove the seeds.
3. STUFF – Fill the peppers with the cheese mixture and sprinkle some chives on top for garnish.
Can I Bake These?
If you prefer a warm version of these, you can bake them, covered, for about 20 minutes on 400 degrees.

- Stir together the sour cream, cream cheese, Buffalo sauce, cheddar cheese & ranch seasoning in a mixing bowl.
- Cut each of the sweet mini peppers in half and remove all the seeds.
- Fill each mini pepper with the Buffalo mixture.
- Garnish with chives.
- Enjoy!
